Can a dish be both simple and decadent? If you have cheese and black pepper, the answer is yes. The last time we made Cacio e Pepe was one year ago, and we’re okay with that because a dish like this is more special (and less artery-clogging) when it’s not on the weekly meal rotation. This might become our once-a-year on a mundane Monday kind of tradition.
